Evening snack - Roasted Salted Monkey Peanuts.

Salted peanuts are a satisfying snack, and when they're homemade, they taste even better and fresher than the store-bought version.

The recipe itself is pretty easy and I find myself making it just so that Mr.M and I can have some sitting around and watching T.V.📺

And also, Snacking on dry-roasted peanuts can help you feel satisfied between meals, and you'll get some nutrients, like iron, that will help sustain your energy levels.

Ingredients

1kg in-shell raw peanuts

30ml peanut oil

1 to 2 tsps salt

Preparation method

  1. Preheat the oven to 180 degrees C.
  2. Rinse the peanuts under cool water to remove excess dirt. Pat dry and place in a large bowl and toss with the peanut oil and salt until well coated.
  3. Place on 2 half baking trays, making sure to spread them out into a single layer. Roast in the oven for 30 to 35 minutes, rotating the pans halfway through cooking.
  4. Once you remove the peanuts from the oven, let them cool slightly before eating. They will continue to cook and become crunchy as they cool.
