Bored with the regular omelette? For a change try making Masala Omelette that makes for a light meal.

A perfect protein-packed start to the day.

I had this masala omelette on a trip to India and it totally converted me to eating great flavours in the morning. Breakfast in India isn’t a sweet affair - no sugary cereals or cakes, but spicy masala omelettes, dosas with sambar, meals that really will set you up for the day and don’t weigh you down.

This is now a go-to dish in our house and not just at breakfast time - it will often get made in the evening snack if we’re hungry. It’s incredibly straightforward and easily to cook, depending on what you have to hand.

Ingredients

Serves 2

  • 4 eggs
  • 2 onions, finely chopped and fried
  • 1 fresh green chilli, finely chopped
  • 1 capsicum chopped
  • Fresh coriander (20g), finely chopped
  • 1⁄2 teaspoon turmeric powder
  • 1 teaspoon chilli powder
  • 1⁄4 teaspoon salt to taste)
  • 4 teaspoons olive oil

Preparation Method:

  1. Break the eggs into a large bowl and lightly whisk until the yolks and whites are mixed. Add the fried onions, green chilli, capsicum and coriander, along with the turmeric, chilli powder and salt, and mix together.
  2. Put a teaspoon of oil into a frying pan on a medium heat. When it’s hot, pour half of the omelette mixture and swirl it around the pan so that the bottom is coated, then leave for a minute or so. The egg should be cooked through but a bit soft on top. Flip it over and cook for 30 seconds or so.
  3. Set aside & keep warm. Repeat and fry one more masala omelettes.
  4. Serve by itself or with some chips, ketchup and a Bollywood soundtrack in the background.
