Grease a mug with butter. Pour in 2 beaten eggs mixed with 2 tbsp milk. Cover with plastic wrap, leaving small gap for steam to escape. Microwave on medium-high for 1 minute and 30 seconds , stirring several times during cooking. Cover and let stand for 30 seconds to 1 minute. Serve with whole-grain toast and a pear or any fruit on hand.
Apple cinnamon microwave muffin in 5 minute
Melt 1 tbsp. butter in a mug in the microwave on low power.
Whisk in 1 egg, 2 tbsp. apple sauce, 1/4 tsp. vanilla extract, and 1 tsp. honey into the mug with the melted butter. Stir in 3 tbsp pastry flour, 1/2 tsp cinnamon, 1/8 tsp baking powder, and a pinch of salt until well combined. Microwave on high for about 1 minute or until set.
Mango tango spinach smoothie
Combine 1 cup milk, 1 sliced banana, ½ cup chopped mango, 1 tablespoon ground flaxseed, 1 cup fresh spinach, ¼ cup plain Greek yogurt, and 2 teaspoons honey. Blend until smooth and Enjoy.
